It isn’t always easy to get children to take nutrients or to eat breakfast. You know they are under stress at school, don’t always eat right, and often adopt dietary choices that might not be good for them, but they still don’t want to take any herbs or vitamins or even eat wholesome food. Well, there is a way to get them to do this. It’s called Antioxidant Pudding. Kids love pudding anytime.
You can create an easy pudding that will taste great and contain some of the top Sunrider® antioxidant products. The base is tofu. Tofu is made from soy beans and therefore contains plant-based protein. This Antioxidant Pudding would make a perfect breakfast meal for a fussy eater who doesn’t want to have a regular breakfast before going to school. Antioxidant Pudding also makes a great after school snack or dessert. It is best to use organic tofu. Tofu made with Calcium Sulfate makes the smoothest pudding, is easy to blend, and sets up like any regular pudding without needing to be cooked or heated, making it the perfect base for the Sunrider products.
This is a very flexible recipe that you can change or add to depending on your preferences. If you use silken tofu you might not want to put the banana in, but you would have to add more sweeteners. Tofu is interesting in that it absorbs flavors, so when you make this pudding to eat right away the flavors will hold. If you are going to refrigerate it you may want to add more flavors to it by increasing the amount of Vitafruit® or Sunectar®.
Juice of half a lemon
Finely grated peel from half a lemon
1-2 tablespoons of Vitafruit®
10-15 drops of Sunnydew® or Sunectar®
1 package Fortune Delight®, fruit flavors work best
1 package VitaDophilus®
1 soft banana, optional
1 tub of soft or silken tofu, drained
Sprinkle of cinnamon, optional
You can make this with the banana or not. A banana gives it a smooth texture and adds some sweetness and cinnamon goes great with banana. Depending on your taste you can add more of the Vitafruit®, Sunnydew® or Sunectar® until smooth. Put in individual custard bowls and refrigerate overnight. Sprinkle with cinnamon for garnish.
Makes 4 servings.
Put the first 6 ingredients in a blender and mix together. If using a banana add it here and blend until smooth. Drop pieces of tofu into the running blender and blend
Tofu must be kept refrigerated. If water separates out, just stir it back into the pudding before serving.
